Dinner dates with Antonio on our roof. Seriously – I don’t think this view will ever get old. Tuesday night was a perfect night in the city to eat outside. (So glad the crazy heat wave is over!)

National Girlfriends Day is today!! I was reading August’s Cosmopolitan and stumbled across this gem. I had to take a picture. As cheesy as ‘National Girlfriends Day’ may be, I really am blessed with the best girlfriends in the world and I don’t know what I’d do without them.

Victoria’s Secret Satin PJs. Remember when I told you I splurged on a bunch of VS bathing suits? Well… I also got these babes. I have them in red too and they are so stinkin’ comfortable. They were on sale for $40 and I just couldn’t pass that up.

apple, avocado & quinoa salad


I love this salad because it’s so simple and easy to make.  It’s the perfect balance of sweet and savory.

Here’s how you make it:


  • 1 avocado
  • 1 red apple
  • 1/2 cup cooked (& chilled) quinoa
  • 1 T Extra Virgin Olive Oil
  • 1 T Balsamic vinegar


  • Cook quinoa and let chill in fridge for a few hours. I usually cook a big batch at once and store it in the fridge for the week.
  • Slice up avocado.
  • Chop apple into smaller cubes.
  • To make the dressing, shake up the vinegar and the EVOO in a small container and drizzle over the salad.
  • Mix ingredients together & enjoy!


Note: if you’re going to make this for lunch, wait to chop up the avocado and the apple until right before you eat the salad; they brown too quickly.


Options to add:

  • Cheese (makes everything better!) – I suggest feta or goat’s cheese.
  • Spices to dressing – sometimes I like to add cracked garlic pepper.

Listening to music that pumps you up during a workout can really change the way you feel and how hard you push yourself.  Sometimes I get lazy and don’t upload new music to my iPhone for a while and I find myself getting super bored during long runs.  Every time I do get around to adding a new killer playlist to my phone, I’m almost certain to have an awesome run.  These are the 12 songs I’m absolutely loving this month.  In particular, “Million Voices” by Otto Knows is my go-to.  It has such a great beat and it really keeps me going.  My marathon training officially started last weekend and Sunday was the first long run I’ve done in a while.  It might sound cheesy, but “Million Voices” seriously got me through ten long miles!  That, and the thought of drinking mimosas and lounging by the pool later that day with my girlfriends. ; ) Either way – download these songs and let me know what you think!

I love this Bill Rodgers quote because it’s so true. Nothing inspires me more than getting passed by an eighty year old man in the middle of a race and looking up only to see a girl with a prosthetic limb powering along. Anyone can be a runner. Don’t get discouraged if you’re just starting out and can barely run for 2 minutes without having an athsma attack; trust me, I’ve been there. You will get past that stage. It might hurt for a few weeks, or even a few months, but trust me – you will get there.

Things I’m Lovin’ Thursday

OPI’s “Mod About You” Polish
This week, I fell in love with this OPI color all over again. Usually I stick with Essie colors. I paint my own nails and I think the Essie brushes are easier to use. However, this OPI polish is by far my favorite light pink color. I love that it’s so opaque. I find that a lot of the Essie light pinks are translucent and you have to do 3+ coats to get a good color on your nails. “Mod About You” only takes 1 or 2 coats and the pastel pink color is a-ma-zing.

I printed this out and hung it up on my desk at work. It’s a great reminder to be passionately curious and to never stop learning. In my industry, there are professional insurance designations that you can obtain through taking a series of exams. While these exams aren’t exactly fun, I learn a lot studying for each one and I know it will be worth it in the long run once I have the designation. I’m currently 5/8 of the way done my CPCU exams and my goal is to finish this year. What does CPCU stand for? Chartered Property & Casualty Underwriter. I told you… not too exciting!  I kind of equate these exams to the CPA exams people who work in accounting have to take. These days, you have to set yourself apart from the masses. Remember: you can never be overeducated or underdressed. Find some quotes or sayings on Pinterest that inspire you and hang them on your desk or in your room. As cheesy as it seems, every time I re-read this I’m inspired.

Coconut Almond Milk
I can’t get enough of Blue Diamond’s coconut almond milk lately. It seriously tastes like a milkshake. Although I prefer the taste of the regular coconut almond milk, I try to buy the unsweetened coconut almond milk when I can. Less sugar, less calories. For some reason, I always have a hard time finding it at the grocery stores, though. My best friend/roomie Tori picked some up for me the other night because she knows I’ve been on a mission to find it; whatta babe. Anyways, it was hilarious because she sent me a picture of our fridge with 4 or 5 different almond milks in it and wrote, “I think we’re running low on almond milk….” Yeah, we’re a liiiiittle obsessed. Ever since I was young, I’ve never been able to drink plain milk. (Chocolate milk is a different story. I could probably drink half a gallon before getting sick of it.) Almond milk is a great alternative to dairy milk. It tastes great in cereal, oatmeal, smoothies or on its own. Not to mention, it’s 100% vegan and contains no animal byproducts, gluten or saturated fat. Wow… it sounds like I’m a salesperson for Blue Diamond. I promise, I’m not! iPhone diary

Antonio showed up to my softball game last night with these. We met exactly 3 years ago playing softball! Such a cute surprise.

We met up with my other brother & his girlfriend after sushi. They were on a date at Tria – one of my favorite spots in the city. How cute are they? She’s visiting from Japan for the month.

Love running around city hall. Sometimes I forget how amazing the building’s architecture is. This picture doesn’t do it justice.

I got home from a run the other day and poured myself not two, not three but four drinks. Guess I was thirsty?!

Made another batch of my healthy oatmeal blueberry muffins. I’m obsessed. (plate – anthropologie).

Went to 2 phillies games last week! I love that we’re only a 15 minute subway ride away.

Antonio surprised me with 4th row seats! Never sat so close.

If I had a penny for every time I said this…

But in all seriousness, it’s true. Once I get a good run or workout in, it’s so much easier not to sweat the small stuff. I’ve been trying to run in the mornings lately because it’s just been so darn hot this summer. It’s the best way to start your day!

healthy banana quinoa pancakes

ROS - pancakes




  • 4 packets truvia
  • 2 cups whole wheat flour
  • 2 bananas (riper the better)
  • 1 cup almond milk
  • 2 eggs
  • 1/2 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 3/4 cup cooked quinoa



  • Blend 2 eggs and bananas in a food processor
  • In a separate bowl, mix flour, baking powder, cinnamon and truvia
  • Combine all ingredients with quinoa and mix until blended well
  • Lightly grease frying pan with extra virgin olive oil
  • Cook pancakes on frying pan on medium/high heat


I made these for brunch on Saturday and they’re delish. The banana and cinnamon together are the perfect combination. I chopped up another banana as a topping and also used light maple syrup. The truvia makes them perfectly sweet; no need for sugar!

Things I’m Lovin’ Thursday


This note pad from anthropologie. How stinkin’ cute? When I pack Antonio lunch for work I usually hide a cute note inside to brighten up his day. This note pad is perfect for that. Although, I’m not gonna lie, the first note I wrote on this notepad was for my best friend Tori : )


Elephant ring. I got this ring four years ago at a little boutique in the city and it’s been my ‘good luck ring’ ever since. A few weeks ago I lost this ring (along with one of my other favorites) and I was so upset. I went back to the store yesterday and they had the exact same one. Same size and everything. And they only had one of them; I couldn’t believe it! I’m thinking it’s a sign. Elephants are a symbol of good luck, which is why I love it so much. I’ve worn my elephant ring in every race that I’ve run in for the last 4 years. I’m a little superstitious… but hey, whatever works, right?


Green Tea Mango green tea to be exact. I’ve been making big pitchers of this tea (5 tea bags for 2L of water) and leaving it in the fridge to drink as iced green tea. It’s so refreshing & tasty and I love that it has 0 calories. Add truvia to make it sweeter. Drink up!
